This low-carb Creamy Caramel Crunch Slice will make you forget all about the crystallised white stuff and leave you wondering how something so nutrient dense can taste so good.
Jam packed with healthy fats, Ghee and Coconut Butter, as well as a healthy dose of theobromine-rich Cacao, this slice ticks all the boxes!

Ingredients
Base
1 ½ cups almond meal
1/2 cup cacao powder
1/4 tsp salt
1/2 tsp monk fruit
1/4 cup coconut butter, melted
2 tbsp hot water
Filling
270ml coconut cream
60g ghee
1 tbsp mesquite
12 drops of stevia
1/4 teaspoon salt
Topping
2 tbsp ghee
2 tbsp cacao butter
1/4 cup cacao powder
20 drops liquid stevia
2 tbsp cacao nibs
Method

Make the base by combining the almond meal, cacao powder, salt and monk fruit in a bowl. Pour in the melted coconut butter and water and press with your hands to form a dough. Press into a lined loaf tin and place in the fridge to set.
- To make the filling, gently heat the coconut cream and ghee until melted together. Remove from the heat and stir in the mesquite, stevia and salt. Leave to cool slightly for about ten minutes then pour on top of the base. Leave in the fridge for an hour or more to set.
- To make the topping, gently melt the ghee and cacao butter, then stir in the cacao powder and stevia. Leave to cool slightly for ten minutes then carefully pour or spread on to the set filling (it will still be a little soft). Top with cacao nibs and leave in the fridge to set completely. Slice and serve.
