Hidden Beef Liver Meatballs

Gram for gram, beef liver contains more nutrients than ANY OTHER food! Sometimes fresh organic beef liver isn’t always easy to source, so freeze-dried liver powder is a convenient and long life alternative for those wanting to experience all the benefits beef liver has on offer. Per serve, our liver powder has the same vitamin + mineral content as eating 18g raw liver, and if you have a hard time incorporating liver into your meals, this versatile hidden beef liver meatball recipe is a great way to start!

Ingredients

500g lamb mince

500g grass-fed beef mince

2 Tbsp garlic powder

2-3 Tbsp dried herbs (parsley, thyme, rosemary)

1 Tbsp paprika

Salt and pepper to taste

1.5 - 2 Tbsp Cell Squared Organic Beef Liver Powder

Cell Squared Organic Ghee, for cooking

 

EASY BONE BROTH (optional)

2-3 cups homemade bone broth*

1-2 Tbsp cassava flour

*Please note: the more flavorful your bone broth is, the more flavorful the gravy will be. You can also add in any leftover meat juices too.

 

Method

MEATBALLS

  1. Add meatball ingredients into a bowl and combine everything (leave out the spices and seasonings if you are following a strict Carnivore protocol).

  2. Roll the mixture into 30 meatballs.

  3. Heat a frying pan and add some ghee. Add a few meatballs to the frying pan and cook on all sides until dark golden brown. Then remove from the pan and set aside in a dish (you can pop it in a preheated oven at approximately 120C to keep warm while you continue cooking the rest of the meatballs).

  4. Add more ghee if needed to cook the next batch of meatballs. Repeat until all the meatballs are cooked.

GRAVY

  1. Add bone broth into a small saucepan and bring up to a medium simmer.

  2. Add the cassava flour, starting with 1 Tbsp. and whisk it together until there are no lumps. (leave out the the cassava flour if following a strict Carnivore protocol and simply serve with bone broth)

  3. Allow it to simmer and reduce for a few minutes. Add more cassava flour and whisk through if you want a thicker gravy.

  4. Serve the meatballs alone or with sides of your choice!
